How to keep an industrial stainless steel kitchen clean and shiny

A guide to daily and periodic cleaning of industrial stainless steel stoves, work tables and sinks so they stay free of stains and scratches and last longer.

Industrial stainless steel stoves and tables are durable, but if cleaned the wrong way they still get yellow stains, scratches or rust spots. Here is a simple cleaning routine that any restaurant or eatery can follow.

Daily cleaning

  1. Turn off the stove and wait until it has cooled completely before wiping.
  2. Wipe the whole surface with a soft damp cloth and diluted dish soap.
  3. Wipe again with a clean damp cloth to remove the soap suds.
  4. Dry with a soft cloth in the direction of the stainless steel grain. This step is very important because standing water leaves stains.

Stubborn grease stains

Mix warm water and white vinegar 1:1, spray on the stain, wait 5 minutes and wipe. For long-standing grease, mix baking soda with water into a paste, apply it and wipe gently along the grain.

What not to do

  • Do not use steel wool or steel scouring pads: they scratch the surface and leave iron particles that cause rust.
  • Do not use concentrated chlorine-based cleaners (bleach): they corrode the protective layer of the stainless steel.
  • Do not let salt water, fish sauce or vinegar sit on the surface for long.
  • Do not use strong acids to scrape off rust.

Weekly deep cleaning

Use a stainless steel cleaner or diluted lemon juice to wipe the table legs, undersides and sinks. Pay attention to welds and hidden corners where residue collects. You can apply a thin layer of food-grade cooking oil to the surface to repel dirt and boost shine.

When rust spots appear

Most of the time this is surface rust from iron particles that landed on the steel, not damage to the stainless steel itself. Wipe gently with stainless steel polish or baking soda, then rinse and dry. If rust spreads at the welds, contact the workshop to redo the welds.
